Nourish is a day built around one idea: that real nourishment happens slowly, outdoors, with your shoes off and your phone somewhere else entirely. You'll start with a guided talk and a hands-on fascia workshop, then settle in for the part everyone's really here for — a long, unhurried lunch under the trees at Doonan.
Every dish is grass-fed, organic and cooked the old way: slow, tableside, and shared. Bring your appetite. Leave the rest at the gate.
Raw Protein Entrées with Organic Grass-Fed Beef
Grass-Fed Tableside Bone Broth
A deep, golden broth simmered low and slow from organic grass-fed bones, poured tableside over a bed of fresh herbs and shaved raw parmesan. Warming, restorative, and the perfect way to wake up your appetite for what's coming.
Slow-Cooked Beef Short Rib
Grass-fed short rib, cooked low and slow until it falls from the bone, plated with charred broccolini and a rotation of seasonal sides straight from the garden. Hearty, honest, and exactly what a long lunch should taste like.
Raw Milk Panna Cotta
Silken raw milk panna cotta, delicately set and finished with ripe stone fruit and a scatter of pistachio crumb. A light, quietly indulgent close to the day.
